The word <em>rasam<\/em>, in the Tamil language, means &#8220;essence,&#8221; or &#8220;juice,&#8221; and has come to mean a particular type of soup that includes the tartness of tamarind or tomatoes. The ingredients used in <em>rasam<\/em> vary, but it is basically a light, spicy soup. The spiciness can be adjusted to your taste. At times I add vegetables to make this soup a complete meal.<\/p>\n<div class=\"ingredients-info\">\n<h2 class=\"section-title\">INGREDIENTS<\/h2>\n<ol class=\"ingredient-groups\">\n<li class=\"ingredient-group\">\n<ul class=\"ingredients\">\n<li class=\"ingredient\">1\/2 cup dried red lentils, picked over, washed, and drained<\/li>\n<li class=\"ingredient\">6 1\/4 cups water<\/li>\n<li class=\"ingredient\">1 teaspoon ground turmeric<\/li>\n<li class=\"ingredient\">1\/2 teaspoon salt<\/li>\n<li class=\"ingredient\">2 tablespoons vegetable oil<\/li>\n<li class=\"ingredient\">10 fresh curry leaves<\/li>\n<li class=\"ingredient\">2 teaspoons black mustard seeds<\/li>\n<li class=\"ingredient\">Pinch of asafetida<\/li>\n<li class=\"ingredient\">One 3-inch-long piece fresh ginger, peeled and finely chopped<\/li>\n<li class=\"ingredient\">1 medium tomato, finely chopped<\/li>\n<li class=\"ingredient\">1 (12-ounce) can unsweetened coconut milk<\/li>\n<li class=\"ingredient\">1 tablespoon tamarind paste<\/li>\n<li class=\"ingredient\">1 teaspoon freshly ground black pepper<\/li>\n<\/ul>\n<\/li>\n<\/ol>\n<\/div>\n<aside class=\"native-recipe-ad ad-wrapper\">\n<div id=\"cns_ads_1495936734084drFEWGEWdHb6tNhAUJm3Sf3tjsCREG_recipe_detail_0_stage\" class=\"cns-ads-stage cns-ads-slot-type-recipe-detail cns-ads-slot-type-recipe-detail-0 cns-ads-slot-state-empty\" data-name=\"recipe_detail_0\" data-slot-type=\"recipe_detail\"><\/div>\n<\/aside>\n<div class=\"instructions\">\n<h2 class=\"section-title\">PREPARATION<\/h2>\n<ol class=\"preparation-groups\">\n<li class=\"preparation-group\">\n<ol class=\"preparation-steps\">\n<li class=\"preparation-step\">1. Place the lentils, 4 cups water, turmeric, and salt in a large pot and cook over medium-high heat until the lentils are tender, about 30 minutes, frequently skimming off any foam with a spoon.<\/li>\n<li class=\"preparation-step\">2. In a heavy-bottom pot, heat the oil over medium heat and add the curry leaves, stirring until very fragrant, about 1 minute. Remove 4 leaves and reserve for the garnish. To the oil, add the mustard seeds, asafetida, ginger, and tomato and cook until the tomato begins to dry, about 3 minutes. Add the lentils, 2 1\/4 cups water, the coconut milk, tamarind, and black pepper and bring to a boil. Reduce the heat and simmer for another 3 minutes.<\/li>\n<li class=\"preparation-step\">3.
